Experience the "Friday Night Fun with Food". Beginning in the 1690's, food in the U.S. deep south was heavily influenced by early settlers from France, Germany and Spain. Slaves from Senegal, Africa and then Cuban refugees and Cajuns from Nova Scotia, Canada also contributed to the medley of flavors using the wealth of local seafood, vegetables, poultry, livestock and, of course, pecans. Create a memorable meal to include: crab dip, traditional cheese straws, gumbo, jambalaya, red beans and rice, buttermilk biscuits, cheese grits, pecan praline candy and traditional bread pudding with bourbon sauce. We may add a few more recipes along the way!

Course Fee includes $17 Food Supply Fee.

Laurel Severson

Laurel Severson is a graduate of the University of Minnesota with a double major in Home Economics and Education. She has worked in businesses throughout her career focusing on food – beginning with editing a series of 12 international cookbooks, testing recipes and editing a British cookbook. She worked at 3M for 30 years supervising the executive dining room, a snack bar, employees buffet, conference dining rooms and the special events such as retirement parties and 25 year anniversary parties before transferring into hospital food service and then the hotel industry. Laurel currently works in many Community Education districts throughout the metro area teaching participation cooking classes. She has traveled extensively including living in the Philippines for one year and in London for two years. An avid collector of cookbooks, Laurel generously shares culinary tips with students. She entertains extensively in her 1882 home and is an energetic volunteer within her St. Paul community. For example, this fall, one volunteer project includes heading up the kitchen crew to feed 500 for a spaghetti supper fundraiser.
