French Gourmet Dinner - A Taste of Provence

Take your taste buds on a trip to romantic France! In this hands-on cooking class, you’ll make a five-course meal inspired by the Provence region—home to Marseille, Nice, and the Riviera.

Provençal cooking is known for its fresh ingredients like garlic, olive oil, tomatoes, saffron, and herbs. You’ll prepare:

  • Vichyssoise (a creamy potato and leek soup)
  • Potato Galettes (crispy potato cakes)
  • Saffron Rice
  • Coquille St. Jacques à la Provençale (scallops in a flavorful sauce)
  • Crème Caramel (a smooth, sweet dessert)

Along the way, you’ll also learn about the history and culture of Provence. Course fee includes a $17 food supply fee.

Laurel Severson

Laurel Severson is a University of Minnesota graduate with a double major in Home Economics and Education. Her career has centered around food—from editing a series of international cookbooks and testing recipes to managing dining services at 3M for 30 years. Her roles included overseeing executive dining, employee buffets, conference meals, and special events before transitioning into hospital and hotel food service industry.

Today, Laurel teaches hands-on cooking classes across multiple Community Education districts in the metro area. She has lived abroad in the Philippines and London, traveled extensively, and is an avid cookbook collector. Known for sharing practical culinary tips, she frequently entertains in her historic 1882 St. Paul home and is an active community volunteer within her St. Paul community.
