The Early Childhood Parent Advisory Council (ECPTO) consists of families dedicated to supporting Osseo Area Schools Early Childhood and Family Education programs - ECFE, Preschool and PreK, and Early Childhood Screening.

Whether you're hosting a special family brunch or looking for a fresh alternative to evening entertaining, this class will show you how to create a memorable meal. Learn tips and techniques for dishes like cheese soufflé with ham, savory strata (a cheesy casserole with crunchy bread cubes), open-faced frittata, and a simple puffy pancake traditionally served with lemon and confectioners' sugar. You'll also enjoy unique breads and creative beverage ideas to round out your brunch menu. Course fee includes a $13 food supply fee.
Laurel Severson is a University of Minnesota graduate with a double major in Home Economics and Education. Her career has centered around food—from editing a series of international cookbooks and testing recipes to managing dining services at 3M for 30 years. Her roles included overseeing executive dining, employee buffets, conference meals, and special events before transitioning into hospital and hotel food service industry.
Today, Laurel teaches hands-on cooking classes across multiple Community Education districts in the metro area. She has lived abroad in the Philippines and London, traveled extensively, and is an avid cookbook collector. Known for sharing practical culinary tips, she frequently entertains in her historic 1882 St. Paul home and is an active community volunteer within her St. Paul community.
