Festive Spring Salads

Celebrate the season with delicious salads that are great for brunch or light meals! In this class, you’ll learn how to make a wild rice and chicken salad—or a tasty vegetarian version with mushrooms and cashews. You’ll also create a colorful quinoa dish with fresh peppers.

Enjoy fruit-based salads like cantaloupe and strawberries with orange sauce, and a beautiful raspberry and spinach salad topped with glazed pecans.

To finish the evening, you’ll make three easy dressings to go with your favorite greens: feta cheese, creamy blue cheese, and orange dressing.

Course fee includes a $15 food supply fee.

Laurel Severson

Laurel Severson is a University of Minnesota graduate with a double major in Home Economics and Education. Her career has centered around food—from editing a series of international cookbooks and testing recipes to managing dining services at 3M for 30 years. Her roles included overseeing executive dining, employee buffets, conference meals, and special events before transitioning into hospital and hotel food service industry.

Today, Laurel teaches hands-on cooking classes across multiple Community Education districts in the metro area. She has lived abroad in the Philippines and London, traveled extensively, and is an avid cookbook collector. Known for sharing practical culinary tips, she frequently entertains in her historic 1882 St. Paul home and is an active community volunteer within her St. Paul community.
