When it comes to sushi made with sushi-grade raw fish such as salmon or tuna wrapped in rice/seaweed, the tolerance spectrum runs from a very strong “yes” or a very strong “no”. Enter California sushi rolls that overwhelmingly turn a “no” into a "yes"! Tess will walk you through how to make a variety of California rolls that will make you wonder why you haven’t tried to make them before. California combinations are only limited by your imagination. Make them vegetarian, with or without seaweed, spicy or not; it is totally up to you. Learn the skill of creating delicious seasoned sushi rice, spicy mayo, and how to stuff, wrap/shape the rolls with wonderful filling ingredients. One of your fillings is a crab salad using crab sticks. Tess will also provide a demonstration of plate decorating ideas. Have your questions answered by Tess, interact with other participants and increase your confidence in the kitchen. While cooking-along is loads of fun, and highly recommended, it is optional. You'll receive a list of ingredients in advance with enough time for shopping and preparation. A professionally made PDF packet of Tess's personal recipes will also be shared. Dim Sum meals often include some sort of dumpling with two of the most popular options being open-faced drum dumplings called “Shu Mai” and other dumplings called “Wontons”. Discover the answers as you dive into the world of unique rolled and stuffed pizzas and a marvelous focaccia bread. Learn how to make your own homemade focaccia bread, a rolled pizza called stromboli, and stuffed pizzas known as calzones. Experience the rave reviews from previous participants as you learn how to make your own pizzas with Tess's step-by-step instructions. Take out pizza may just become a thing of the past. On the menu: stromboli (rolled/filled pizza), calzones (stuffed pizza), focaccia bread, and an out-of-this-world pizza sauce. Two different types of homemade dough are used. One will be for your pizza options, the other for the focaccia. Tess will provide guidance and instruction to ensure the process is a simple as can be. Participants can personalize their pizzas with and focaccia bread with toppings and fillings of their choosing. All recipes have been created by Tess and tested over the years to ensure maximum flavor. Choose which ones you would like to make and watch a demonstration of the others or make them all. Beginning in the 1690's, food in the U.S. deep south was heavily influenced by early settlers from France, Germany and Spain. Slaves from Senegal, Africa and then Cuban refugees and Cajuns from Nova Scotia, Canada also contributed to the medley of flavors using the wealth of local seafood, vegetables, poultry, livestock and, of course, pecans.
