    Class takes place on Zoom a free online software. You will receive instructions on how to access the class prior to it starting. Please have a current email on file with us. If you need to cancel one of Ploy's classes and you have already been sent a recipe for the class, you will not receive a refund. You may contact us about transferring your enrollment to another participant. Embrace the light and delicate flavors of Vietnamese cuisine known for fresh herbs, vegetables, and dipping sauce. You'll make Vietnamese fresh rolls with dipping sauce and Vietnamese noodle soup (pho) with chicken.

    Observe a sourdough dough making demonstration, molding dough for open bake demonstration and get answers to the most common "mistakes" made while making sourdough. You will get all of Sandra's tips and tricks associated with sourdough bread making focused on keeping the process simple and manageable for anyone interested in making this delicious bread. This 90 minute in-person workshop includes a fresh active starter and printed copy of the essential information for each registered participant. You will feed and learn how to maintain your new starter.
  • Tantalizing Thai Cuisine (Participation Class)

    Begin by preparing Vietnamese summer rolls (fresh) served with both hoisin and peanut sauce for dipping. Included are Vietnamese spring rolls (fried) with pork, turkey, and glass noodles stuffed in rice paper and fried crisp and golden. You'll then prepare Pad Thai blending the vibrant flavors of Thailand with rice noodles, breast of chicken, eggs, chilies, garlic, basil, scallions, bean sprouts, and more. For dessert, Thai lime custard topped with fresh whipped cream.

    Tex Mex Fiesta (Participation Class)

    You'll begin with "Empanadas ", pastries filled with beef, tomatoes, potatoes and herbs. Flautas are next with chicken in a jalapeno/garlic paste and fried crisp in a corn tortillas. You'll then prepare authentic Mexican rice prepared with onions, garlic, tomatoes and fresh cilantro along with Mexican style corn prepared with lime aioli, cayenne pepper and Cotija cheese. Fajitas follow with tender strips of marinated beef and chicken with fresh sauteed bell peppers and onions wrapped in a warm tortilla shell. Finish this fiesta with a Yucatecan-style delight, fresh coconut blended with rich custard in a wonderful nutty crust, baked to a caramelly brown, and served with crème fraȋche.

    The Art of Sushi (Participation)

    Explore the world of sushi as you create this Japanese delicacy yourself. Begin by preparing the coveted sushi rice, then learn the art of "nigiri-sushi" (hand molded rice) topped with shrimp, unagi, tamago, ahi tuna, and more. Then, learn how to prepare "maki-sushi" using a bamboo mat to roll rice with various fillings in and around Nori (seaweed sheets). Options and accompaniments will include surimi, cucumber, avocado, cream cheese, teriyaki chicken, tempura onions, spicy mayo, eel sauce, wasabi, pickled ginger and soy sauce.
  • Traditional Southern Cooking - Dinner

    Experience the "Friday Night Fun with Food". Beginning in the 1690's, food in the U.S. deep south was heavily influenced by early settlers from France, Germany and Spain. Slaves from Senegal, Africa and then Cuban refugees and Cajuns from Nova Scotia, Canada also contributed to the medley of flavors using the wealth of local seafood, vegetables, poultry, livestock and, of course, pecans. Create a memorable meal to include: crab dip, traditional cheese straws, gumbo, jambalaya, red beans and rice, buttermilk biscuits, cheese grits, pecan praline candy and traditional bread pudding with bourbon sauce. We may add a few more recipes along the way! Course Fee includes $17 Food Supply Fee.

    Truffles Candies for All Occasions

    You’ve tried the rest. Now try the best truffles of all that you can make yourself. This is one of Nancy’s most popular classes. She has shown thousands of students how to make these rich, chocolaty delicacies. In just one class, you’ll be making truffles for special occasions from graduations to weddings for gifts and more. You'll make five different recipes in class and will also take home a nice box of truffles. Candy boxes will be provided. A $13 supply fee payable to instructor at class. Optional truffle/candy kit will be available for purchase for future candy making projects. Price of optional kit is $20.
