    Begins with bruschetta topped with fresh mozzarella cheese, skinned roma tomatoes and sweet roasted bell pepper sprinkled with fresh basil and drizzled with olive oil. You’ll prepare “Chicken Marsala” with fresh sauteed mushrooms in a sweet Marsala butter sauce. You’ll see how that measures up against “Chicken Limone” topped with a chardonnay, lemon, butter sauce with capers. Both entrees are paired with "Spaghetti Aglio Olio", tender garden vegetables tossed with olive oil, garlic, and Romano cheese.     Some classic, quick and spectacular dishes for company that are both healthy and delicious. You'll work with whole chicken, chicken parts and versatile skinless-boneless chicken breasts. You'll use skillets and an oven to prepare and enjoy chicken: cordon blue, marsala with sage, Philippine-style adobo, strips with spicy honey dipping sauce, white wine and mushroom sauce, crab-stuffed breasts, crispy parmesan strips, Italian lemon, lemon kebabs, pineapple-raspberry nibbles, raspberry lime and roasted mushrooms and apples.     Are you wanting to save money on cakes that actually look good and taste good as well? Nancy will show you many super simple ideas for making the most beautiful cakes. You will go home with easy, yet stunning cakes each week. No experience is necessary as this is a "beginner on up" class. You will be surprised at what you can do with just a cake and some yummy frosting and trims. Supply fee of $16.00 payable to instructor at class.
  • Czech Kolaches

    Kolaches are one of Czechoslovakia’s national pastries and immigrants brought their passion and recipes for Kolaches to the Midwest as early as the 1860’s. Using slightly sweet and egg-rich yeast dough, Kolaches are traditionally baked with fillings made from apricots or prunes, cottage cheese or poppy seeds. You can shape them into small rounds, square “tied packages,” or filled turnovers. You will make variations in class and taste samples then take home an assortment to share with family, friends, or to freeze. You will also receive many recipes, tips and techniques to master these marvelous Old World delicacies. Better than a bakery! Course Fee includes $15.00 food supply fee.

    Four Famous Ethnic Cookies

    Learn to create the rolled Norwegian cookie - krumkakes made with cream, butter and cinnamon or sometimes flavored with vanilla. For generations, Minnesotans have purchased irons to bake krumkakes from local manufacturer Nordic Ware in St. Louis Park. Italian pizzelles are also baked on the stovetop using an iron but are a flat, anise-flavored cookie also flavored with vanilla. The chewy, almond Swedish sandbakkeles are delicate golden brown and are baked in tiny tins to resemble tarts. Finally, you’ll master deep fried rosettes, those exceedingly fragile, paper thin Scandinavian delicacies dusted with confectioners' sugar. Expect great recipes plus the many steps and techniques that will make your baking a success! Please bring containers with you.

    The MN Hot Dish (also called casserole) is a one-dish supper or side dish baked in your oven using a single piece of cookware - you betcha! Use fresh ingredients (no canned soups) and easy prep for a family meal or make impressive elegant company fare for friends. Many of these hot dishes can be made ahead, chilled and then baked. Create up to 15 dishes including: beef, pork and sauerkraut; pork loin with dried apricots and cherries; beef and spinach; eggplant and cheese; chicken cobbler with carrots, mushrooms and peas; lentils and vegetables; and baked penne pasta with chicken, broccoli and mushrooms just to name a few. Recipes are enhanced by a blend of diverse ethnic influences to create a sensational meal, easy to prepare, a pleasure to serve and a delight to eat. Course Fee includes $16.00 food supply fee.
  • Holiday Cookie Bake & Take

    Oh no! Are all the holiday preparations getting you down?? Don’t fret, Nancy’s team will help you get your baking done in no time at all! You will go home with ten dozen cookies in all. In this hands-on class you will be working in pairs. You will be provided with cookie dough and everything you need to form, trim, and decorate the cookies. Your cookies will be baked for you by Nancy’s team in large commercial ovens. Hairnets and gloves will be provided, but bring your own apron if you like. And most important, don’t forget to bring containers to carry home your ten dozen treats. Please arrive on time and plan on staying the full three hours, which includes assisting with clean-up at the end of class. Due to safety restrictions, and out of respect for the adult attendees, no children are allowed in or near the class. If you cannot find child care you may send someone in your place. Please be respectful to others; if you are ill, you may find someone to take your place. Cookies will not be provided for no-shows.     Love Your Lefse

    This wonderful Norwegian delicacy is made for banquets, holidays, weddings and other special occasions. If you’re Norwegian and missed recording Grandma's recipe, tips and techniques then you'll simply flip for this class! Learn the fine points in making the dough, baking, storing and how to serve lefse. Bonus is there is a bit of history and humor involved as well. Begin with real potatoes using a number of authentic recipes and a modern version using instant potatoes. Plan to sample your fresh and warm creations with traditional fillings plus take home finished lefse and dough to bake and share with family and friends.

    They are beautiful and so fun to make! Your instructor will show you some simple tricks to make the process easy. We will make three different kinds: lovely blueberry, lemon, and pink cherry or strawberry. There will also be some chocolate macarons for you to sample. Students will bake and assemble one recipe from start to finish, as well as decorate and assemble the other two recipes. You will be the talk of the party when you serve these little delicacies!     Mile High Apple Pie

    Fall is in the air! With that comes apple season. This is the time of year to make the very best apple pie. If you have ever said “I can’t make pies”, then this class is meant for you. Nancy will take you through all the steps, from making a crust, to preparing all of the filling for your pie using the freshest apples from Brand Farms in Farmington. You will be surprised how easy it is! Each student will leave class with a hot apple pie to share with family and friends. Boxes will be provided, but please bring a rolling pin and a potato peeler to class if you have them. Nancy will have some extras, too. A supply fee of $14 per student is payable to the instructor at class.

    What could be better than chocolate, caramel, pecans, and more? In this class, you will mix, bake, and assemble a decadent 3-layer cake. Baklava is a traditional Greek layered dessert pastry made with phyllo, chopped nuts, other secret ingredients, and is bathed in dreamy syrup. Spanakopita, on the other hand, is a Greek savory pastry, consisting of a filling made of spinach, cheese, and other secret ingredients, which is then wrapped in delicate sheets of phyllo pastry. Tess grew up in a Greek home where Baklava and Spanakopita were made and enjoyed throughout the year, but especially for any and every holiday. She too joined in the tradition of creating these delicate pastries ever since she was roughly the age of six. Now, many years later, she has decided to share this tradition and her secrets with participants of this online cook-along class. When it comes to sushi made with sushi-grade raw fish such as salmon or tuna wrapped in rice/seaweed, the tolerance spectrum runs from a very strong “yes” or a very strong “no”. Enter California sushi rolls that overwhelmingly turn a “no” into a "yes"! Tess will walk you through how to make a variety of California rolls that will make you wonder why you haven’t tried to make them before. California combinations are only limited by your imagination. Make them vegetarian, with or without seaweed, spicy or not; it is totally up to you. Learn the skill of creating delicious seasoned sushi rice, spicy mayo, and how to stuff, wrap/shape the rolls with wonderful filling ingredients. Add three wonderful treats to your holiday celebration as you learn to create freshly baked homemade Cinnamon Rolls, luscious Basque Burnt Cheesecake, and velvety Hot Cocoa Bombs!
